But, honestly, chopped up small, with rum and raisins - it's mincemeat, but I preferred it to bought mincemeeat as it wasn't too sweet. It was an experiment - but for once it worked! (Actually, I did bacon/rosewater/orange peel tart the weekend before and that's quite nice, too ... but I do realise I'm sounding like the mad old lady in The Vicar of Dibley!) But the royal recipe is mucch lusher - off top of my head there was roast beef, pears, ginger and copious amounts of alcohol. Maybe next year. I'm mince-meated out for now.<br /><br />I like it slightly chewy, but I think I left this in too long, callmemadam - much longer than it said in the recipe, because when I looked it seemed completely wet inside. And of course you can't stick a skewer to test! <br />I've had mince pies with mutton before and they were amazing - best I've ever tasted. It freezes well. Grigson also has a recipe (in English Food) for mince pies as made traditionally with meat.
