All I can say is that the buffalo is a very chewy and gristly beast.
Even if it tickles me to think of them grazing in English pastures. (Apparently, they're imported from Romania.)
On the other hand, Heston Blumenthal's recipe for steak was as good as it gets. Bacon and egg ice-cream for afters, anyone?

I think it sounds quite nice, Kristina, not that I've ever tasted it. But I'd love to go to his restaurant sometime.
I wish you could come to Bismarck and have a nice buffalo burger - very tasty and not chewy and gristly at all. Maybe ND buffalo are babied like Kobe beef?
I'm sure that's right, Julie - burgers are best in their native habitat!
